Italian meringue buttercream takes Swiss meringue a step further by creating a sugar syrup that's poured over whipped egg whites. This extra step makes it exceptionally stable, even in hot and humid weather. Italian meringue buttercream has a luxurious, silky texture and a slightly glossy appearance, making it perfect for wedding cakes and other high-end desserts. Its taste is less sweet than American buttercream, but it's incredibly rich and indulgent. Here at A Love For Cakes this is our choice and we use it on the outer layer of all our cakes. Our fondant finishes always sit on top of a thin coat of it to ensure a perfect finish.

French Buttercream

French buttercream is a luscious, custard-like frosting made by whipping egg yolks and creating a custard syrup. It's blended with softened butter to create a silky, melt-in-your-mouth experience. French buttercream has a beautiful pale yellow color and a rich, buttery flavor. It's an excellent choice for filling macarons, eclairs, and other delicate pastries. The downside is that it's more perishable than meringue-based buttercreams.
